Ingredients:
- 1 cup oat flour
- 1 scoop Salted Caramel Pro Refit Protein
- 1/4 cup coconut sugar
- 1/4 cup unsweetened applesauce
- 1/4 cup unsweetened almond milk
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup low fat caramel sauce (recommend skinny mixes Salted caramel sauce)
- Sea salt flakes, for topping
Instructions:
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large mixing bowl, whisk together the oat flour, protein powder, coconut sugar, baking powder, and salt.
- In a separate bowl, mix together the applesauce, almond milk, melted coconut oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until well combined.
- Stir in the caramel sauce until fully incorporated.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 15-18 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
- Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- Drizzle additional caramel sauce on top of the cooled cupcakes and sprinkle with sea salt flakes.
