Salted Caramel Protein Cupcakes

Ingredients:

  • 1 cup oat flour
  • 1 scoop Salted Caramel Pro Refit Protein
  • 1/4 cup coconut sugar
  • 1/4 cup unsweetened applesauce
  • 1/4 cup unsweetened almond milk
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup low fat caramel sauce (recommend skinny mixes Salted caramel sauce)
  • Sea salt flakes, for topping

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the oat flour, protein powder, coconut sugar, baking powder, and salt.
  3. In a separate bowl, mix together the applesauce, almond milk, melted coconut oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Stir in the caramel sauce until fully incorporated.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for 15-18 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
  8. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  9. Drizzle additional caramel sauce on top of the cooled cupcakes and sprinkle with sea salt flakes.
  10. Enjoy your delicious and protein-packed salted caramel cupcakes!
